Sweet Potato Rounds

  • 2-3 large sweet potatoes
  • ½ teaspoon cumin
  • ¼ teaspoon chili powder
  • ¼ teaspoon cayenne pepper
  • ½ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ¼ teaspoon turmeric
  • 1 teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons avocado oil, plus more for the cookie sheet

Slice sweet potatoes into thin rounds. Mix all seasonings in a bowl and toss with the sweet potatoes. Lay a single layer of sweet potatoes on an oiled cookie sheet and bake for 18 minutes at 400 degrees F, turning halfway through. (All ovens are different, so be sure to check while cooking!) Remove from the oven if edges start to burn. The rounds should be soft in the middle, not crunchy. The leftovers are really good as a cold snack.
